ok, not really a 'tutorial' per se but I thought this simple read was worth it because you can trick IE into reading HTML5. That means you can use HTML5 structures but still have your page viewable in IE.

the resources section has some links that are helpful. Such as tools like modernizr to help you with full on support of tags and such. HTML5 shiv does the same thing as the above link but has been tweaked a bit to handle some oddities.
