I have to process 14 cd's of photos. I know it's possible to convert the CMYK if it's in other modes, but is it possible to change the resolution if the image is of a specific dpi?

if you are running a batch or automating the process as an Action, simply record a step from the Image menu... Image > Image size... image size will let you set both physical size and resolution
